Young man's profession

Could anyone suggest a profession for this young man? Many thanks.

Unless someone knows what the piece of board and the wooden thing is around his waist is used for then I've drawn a blank.

The tray/board foxed me a bit but I think the implement is a knife sharpener and I think he's a butcher's boy. See this pic from the Library of 19th Century Photography :

Thank you so much. My guess was a butcher's boy but the wooden thing looked so odd. The photo from the Victorian collection shows that it was used to carry the meat. Mystery solved.

If you enlarge the picture I've linked to , the boy is carrying the meat on a similar 'tray' on his shoulder.
