I'm trying to find the above marriage
James Hibble to Emma Sudbury
Approx 1825 - 1857

They had a daughter Alice who was born 1858 in Halstead , Essex

You could see it online on SEAX, the Essex Record Office website. But you would have to pay, I think its a tenner for 24 hours access, they have other fees for longer periods.
That record came from LDS microfilm 1472339, which is parish registers for Holy Trinity, Halstead.
FamilySearch also seem to have indexed the banns.

As they have indexed the father of James Hibble as Charles, this might be his baptism at St Andrew Halstead, 13 April 1830, mother is Catherine

Before 1837 I don't think they put the parents names ( father or mother ) on the marriage certificates ........?

Is that correct ?

No, sadly they didn't.
A marriage at Chelmsford, 1 January 1821, Charles Hibble + Catharine Matt

It gets very difficult before 1837 to find the parents of a marriage

What's the best way to try and find them please ?

If Charles and Catherine had any children after 1 July 1837, and if even just one of them was registered then you will have Catherine's maiden name from the certificate. And now from the new birth index on the GRO website as well.
Otherwise the usual detective work - ages and places of birth on the census, any relatives living with them or possible relatives living nearby, process of elimination, etc, etc
